One thing I love about spring and summer, there is fresh produce EVERYWHERE!!! It seems like every time I jump in my car I’m passing another Farmer’s Market. Thank you Jesus! Not only that, the produce is better in the grocery stores this time of year as well.
I took full advantage of this a couple weeks ago. I was preparing a weekend brunch and the first thing that came to mind was a fruit tart aka fruit pizza. It was so delicious, I had to share the recipe with you.
You Will Need:
1 roll (16.5 oz) refrigerated sugar cookies dough
1 package (8 oz) cream cheese, softened
1/3 cup sugar
1/2 teaspoon vanilla
3 kiwifruit, peeled, halved lengthwise and sliced
2 cups quartered fresh strawberries
1 carton (11oz) of fresh blueberries
1/2 cup apple jelly
Notes: The apple jelly thing might seem a little wired but I highly recommend that you do this. It acts as a preservative and keeps the fruit fresh tasting and fresh looking. You will not be able to taste the apple jelly if you are only using 1/2 cup. If you do not have a pastry brush to apply the jelly, just use a spoon.
Simple and Sweet Dr. Pepper Ham Glaze
Easter is around the corner, so I thought I would share with you my summertime ham glaze recipe. I tend to save the spicier versions for Thanksgiving & Christmas. And by spicy, I mean nutmeg, cloves…that kind of thing. Plus I just wanted an excuse to use more Dr. Pepper in my cooking with this one. I mean, YUMMMMMM!!!! Yes please. Give it a try. I think you’ll like it!
Simple and Sweet Dr. Pepper Ham Glaze for a 3 to 4 pound ham
1/4 cup honey
2/3 cup packed brown sugar
1/4 cup Dr Pepper
1/2 tsp Cinnamon
Throw ham and glaze in a slow cooker on low in the morning and it will be ready for you to eat after church on Sunday.
Side note….just mixing Dr. Pepper and Brown Sugar DOES NOT WORK. I tried it for you.
With spring here and summer around the corner, I’m avoiding the heavier calorie packed chocolate delicacies that I have LOVED during the winter. With the warmer temperatures creeping up on us, I wanted a dessert that was LIGHT and REFRESHING. My mind was immediately drawn to STRAWBERRIES!!!! And you can’t have strawberries without its accomplice, Whipped Cream. But why stop there? Let’s put both of these on top of an airy white CAKE flavored with JELLO!!! Mmmmmmmmm! I don’t know about you, but I’m ALL IN on this one!!!!
1 box white cake mix
3 egg whites
1/3 cup oil
1 cup water
3oz box of Strawberry Jell-o
1 cup boiling water
Whipped Cream 12 oz
Fresh Sliced Strawberries
Make cake according to box instructions for a 13x9 inch cake. This will usually include mixing the cake mix with 3 eggs whites, 1/3 cup oil, and 1 cup water for 2 minuets.
Pour into a greased 13x9inch baking pan. Bake according to the instructions on the box of cake mix. I used a glass pan and baked at a 350 degree oven for 35 minuets.
Allow cake to cool.
Meanwhile, stir the Strawberry Jell-o into 1 cup of boiling water. Stir until completely dissolved.
Using the handle of a wooden spoon or a large serving fork, poke holes into the cake. Only insert the wooden spoon or fork halfway down.
Pour the Jell-o mixture as evenly as possible over each hole. Refrigerate for 2 hours. Top with whipped cream and strawberries.
Easy and delicious!!!!!!! Enjoy!!!!!!
